Ingredients

The ingredients are:
  • 12 ounces dry egg noodles
  • 4 tablespoons butter, divided
  • 3 tablespoons all purpose flour
  • 1 teaspoon dry mustard
  • 1 teaspoon pepper
  • 1 teaspoon Cajun seasoning
  • 3 cups milk
  • 3/4 cup cheddar cheese, shredded
  • 1 pound kielbasa (or smoked sausage, cut into coins)
  • 1 to 2 cups sauerkraut, drained (Use more or less depending on your tastes)
  • 1 cup breadcrumbs (I use rye bread in food processor)

How to Make

  • Step 1: Preheat oven to 375°.

  • Step 2: Prepare pasta according to package directions, drain and set aside.

  • Step 3: In a large skillet add 3 tablespoons butter and melt on medium heat. Whisk in flour, stirring continually to cook the flour a bit, about 2 minutes.

  • Step 4: Whisk in the milk and seasonings.

  • Step 5: Stir until thickened. When it thickens, add the cheese and stir to combine.

  • Step 6: Remove from heat and stir in the drained noodles, sauerkraut and kielbasa into the cheese gravy.

  • Step 7: Pour casserole into a lightly greased 9x13 pan or similar. Sprinkle bread crumbs over the top and dot casserole with 1 tablespoon butter cut into very small pieces. Bake for 30 minutes. Serve!
