Step 1: Warm oil in a large skillet over medium-high heat until shimmering.
Step 2: Add mushrooms, snap peas and green onions and cook stirring constantly, until snap peas are bright green and mushrooms have released their liquid, 3 to 4 minutes.
Step 3: Add garlic and cook for about 30 seconds.
Step 4: Add soy sauce and cook for 3 to 4 minutes more, until snap peas are crisp-tender.
Step 5: Serve. Sprinkle with red pepper flakes, if desired.
