Ingredients

The ingredients are:
  • 4 (12 ounces) portobello mushrooms (3 ounces each)
  • 4 (4 ounces) Gouda cheese slices (1 ounce each)
  • 1 pound lean ground beef
  • 1 can (127 ml) green chilies
  • 1/3 cup cooked rice
  • 1/3 cup ketchup
  • 3 tablespoons grated parmesan cheese
  • 1 tablespoon mustard
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt

How to Make

  • Step 1: Place the ground beef, green chilies, ketchup, mustard, chili powder, garlic powder, dried oregano and salt in a large non-stick skillet cook over medium-high heat until beef is browned, about 15 minutes.

  • Step 2: Meanwhile, remove the gills and stems from the mushrooms and wipe them clean.

  • Step 3: Add the rice and parmesan cheese to the cooked meat mixture and stuff the mushrooms using all the meat mixture.

  • Step 4: Place the mushrooms, stuffed sides up on a baking pan and top with the cheese slices.

  • Step 5: Place under the broiler on the top shelf of the oven for 3 to 4 minutes until cheese is melted and is slightly browned.

  • Step 6: Allow to cool a couple of minutes.

  • Step 7: Enjoy!
