Ingredients

The ingredients are:
  • 1 large eggplant, peeled
  • 1 tablespoon oil
  • 1 medium yellow onion, chopped
  • 1 small green pepper, chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley (or 2 tablespoons dried parsley)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg (beaten)
  • 1/2 cup bread crumbs (or more)
  • 1/4 cup parmesan cheese, grated
  • 3 tablespoons oil, for frying

How to Make

  • Step 1: Cut ends off eggplant, chop up in chunks and run through meat grinder or food processor so it's small, but not liquified.

  • Step 2: In a preheated skillet on medium heat, pour 1 tablespoon oil and saute onions and green pepper till softened. Add garlic and cook for a couple more minutes. Let cool slightly.

  • Step 3: Then put the eggplant, saute mixture and the rest of the ingredients (except the oil for frying) in a bowl and mix well. You may need to add more bread crumbs if the mixture is too wet to form into patties.

  • Step 4: Add the remaining oil to the skillet and heat on medium. Form eggplant mixture into patties and place in hot oil and fry till heated through and golden brown on both sides
