The ingredients are:
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 6 tablespoons butter (cold)
  • 4 ounces cheddar cheese, finely grated
  • 1/4 cup sesame seeds (toasted)
  • 1/2 teaspoon soy sauce
  • 4 1/2 to 7 1/2 teaspoons water (ice-cold)

How to Make

  • Step 1: Combine flour, salt and pepper in medium bowl; cut in butter until mixture resembles coarse crumbs.

  • Step 2: Stir in cheese and sesame seed. Combine soy sauce and 3 teaspoons water; stir into dry ingredients.

  • Step 3: Add more water, a little at a time, mixing lightly until dough begins to stick together.

  • Step 4: Turn out dough and press together on lightly floured board or pastry cloth; roll out to 1/8 inch thickness. Cut dough into 2 X 1 inch rectangles with pastry wheel or knife.

  • Step 5: Place on lightly greased baking sheets and bake at 400 degrees F. 8 to 10 minutes, or until lightly browned. Remove crackers to rack to cool.
