Ingredients

The ingredients are:
  • 1 1/4 cups beef broth, divided
  • 1/4 low sodium soy sauce
  • 1 1/2 teaspoon ground ginger (or 3 tablespoons freshly grated ginger)
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon black pepper
  • 1 1/2 pounds beef round (steak sliced thinly into strips)
  • 2 garlic cloves, minced
  • 2 tablespoons oil (olive oil for frying steak)
  • 3 medium bell peppers, sliced thinly
  • 1 medium onion, sliced thinly
  • 2 large tomatoes, peeled and chopped
  • 3 tablespoons cornstarch

How to Make

  • Step 1: In a small bowl, combine 3/4 cup beef broth, soy sauce, ginger, sugar and pepper, set aside. In a skillet over medium heat, brown beef and garlic in oil. Add peppers and tomatoes when steak is browned. Cook and stir until peppers are crisp tender, (about 3 minutes). Stir soy sauce mixture and add to pan. Cover and cook until the meat is tender, about 15 minutes. Combine cornstarch with remaining broth and stir to combine well. Add to pan and bring to a boil, stir for 2 minutes or less as it thickens. Serve over hot rice.
