Ingredients

The ingredients are:
  • 1 pound romaine lettuce, torn into bite size pieces (or use 1/2 romaine, 1/2 iceberg lettuce)
  • 1/4 small red onion, sliced very thin(I use a mandoline)
  • 12 whole black olives (pitted, sliced, I like to use kalamata)
  • 6 pepperoncini peppers, sliced
  • 2 small Roma tomatoes, sliced
  • 1/2 cup croutons
  • Parmesan cheese, grated
  • Freshly ground black pepper
  • DRESSING
  • 1 1/2 cups Italian salad dressing (use a good quality)
  • 2 tablespoons Parmesan cheese, grated
  • 2 tablespoons granulated sugar
  • 1/4 cup egg substitute (like Egg Beater's-or use 1 egg)
  • 2 tablespoons mayonnaise
  • 1/4 cup oil

How to Make

  • Step 1: To make Italian dressing: Blend Italian dressing, Parmesan cheese, sugar, egg substitute and mayonnaise in blender or food processor on high speed 1/2 minute or until smooth. Pour this mixture into the top of a double boiler and add 1/4 cup oil. Stir gently with a whisk over gently boiling water until it begins to thicken and egg is completely cooked. Chill several hours or overnight before using. If the dressing is too thick, add more Italian dressing as needed.

  • Step 2: To make salad: In a large glass or wooden salad serving bowl, toss together the lettuce mix, onion slices, olives, pepperoncini, tomatoes, and croutons. Add Italian dressing and toss to combine. Makes 2 cups.

  • Step 3: Serve with fresh Parmesan cheese and black pepper to taste.
