Ingredients

The ingredients are:
  • 1 shank (10 ounce) lamb
  • 1 small potato, thinly sliced
  • 1 clove garlic, pressed
  • 1 sprig rosemary
  • 1 tablespoon bacon grease
  • 1 tablespoon honey
  • 1 tablespoon old fashioned grainy mustard
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Pepper to taste

How to Make

  • Step 1: Layer 2 sheets of foil over a foil plate.

  • Step 2: Put the bacon grease over the foil and place the sliced potatoes over the grease, add the sprig of rosemary and sprinkle with salt and pepper.

  • Step 3: Remove the fat and membrane from shank and place on top of potatoes, mix together the honey, and mustards and pour over the shank.

  • Step 4: Close the foil by folding it against the shank making sure you have a good seal.

  • Step 5: Place on the middle rack in the oven; cook for 1 1/2 to 2 hours.

  • Step 6: Enjoy!
