Step 1: Layer 2 sheets of foil over a foil plate.
Step 2: Put the bacon grease over the foil and place the sliced potatoes over the grease, add the sprig of rosemary and sprinkle with salt and pepper.
Step 3: Remove the fat and membrane from shank and place on top of potatoes, mix together the honey, and mustards and pour over the shank.
Step 4: Close the foil by folding it against the shank making sure you have a good seal.
Step 5: Place on the middle rack in the oven; cook for 1 1/2 to 2 hours.
Step 6: Enjoy!
