Ingredients

The ingredients are:
  • 3/4 cup crunchy peanut butter
  • 1/2 cup honey
  • 1/2 cup brown sugar, packed
  • 1 1/2 teaspoons vanilla
  • 2 cups rolled oats
  • 1/2 cup shredded coconut
  • 1/4 cup finely chopped walnuts (or finely chopped peanuts, or nuts of choice)
  • 1/3 cup dried cranberries

How to Make

  • Step 1: In a saucepan combine the peanut butter with honey and brown sugar; cook stirring over medium-low heat until the sugar has completely dissolved (about 2 minutes) then mix in vanilla.

  • Step 2: Mix in the oats to the peanut butter mixture, then mix in the nuts, coconut and cranberries.

  • Step 3: Cool for about 5 minutes or until just cool enough to handle.

  • Step 4: Using slightly damp hands shape into bite sized balls and refrigerate.

  • Step 5: For a softer texture remove from refrigerator about 5 minutes before serving.
