  • 8 ounces rainbow trout fish fillet (cut into 2 pieces)
  • 1/2 cup dry instant rice
  • 1/2 cup chicken broth
  • 1/4 cup green bell peppers, finely chopped
  • 2 tablespoons yellow onion, finely chopped
  • Italian salad dressing (1/4 cup)
  • Fresh ground pepper to taste
  • Garlic powder to taste

How to Make

  • Step 1: Preheat oven to 375 degrees Fahrenheit.

  • Step 2: In a small casserole dish, place the rice, green peppers and onion and add the broth.

  • Step 3: Place the trout fillet on top of the rice mixture, sprinkle generously with pepper and garlic powder.

  • Step 4: Pour the Italian dressing over the fish fillet and cover the casserole dish.

  • Step 5: Cook for 35 to 40 minutes until rice has cooked out and the fish just flakes easily.
