  • 2 cups granulated sugar
  • 1 teaspoon pure vanilla extract
  • 4 large eggs
  • 1 tablespoon yellow cornmeal
  • 1/4 cup evaporated milk
  • 2 teaspoons white vinegar
  • 1 (9-inch) pie shell, unbaked (I just use a refrigerated crust)
  • Whipped cream if desired

How to Make

  • Step 1: Preheat the oven to 400 degrees.

  • Step 2: Mix together the butter, sugar, and vanilla. Mix in the eggs, one at a time, then stir in the cornmeal, milk, and vinegar.

  • Step 3: Pour the mixture into the pie shell and bake 15 minutes.

  • Step 4: Reduce oven temperature to 300 degrees. Bake 45 minutes.

  • Step 5: Let the pie cool, but it is best when served at room temperature or just barely still warm.

  • Step 6: If desired, pie may be served with whipped cream.
