Ingredients

The ingredients are:
  • 8 to 10 cups cubed watermelon (seedless)
  • 1 cup green onions, chopped
  • 1 jalapeño pepper, diced (optional)
  • 1 to 2 cups feta cheese, crumbled (to taste)
  • 1/2 cup fresh mint leaves, chopped
  • 1/4 cup balsamic vinegar (Lemongrass-Mint Infused White Balsamic is my favorite)
  • 1/3 cup oil (olive oil)

How to Make

  • Step 1: In a large bowl mix together the watermelon,green onions, mint leaves and feta.

  • Step 2: Whisk the olive oil into the balsamic,

  • Step 3: Pour the olive oil mixture over the watermelon mixture and toss.

  • Step 4: Serve immediately.
