  • 4 bacon slices
  • 4 tablespoons butter
  • 1 cup yellow onion, chopped
  • 2 cups cooked diced potatoes (peeled)
  • 1 cup clams, minced (drained, or more to taste)
  • Chopped fresh parsley, to taste
  • Sea salt to taste
  • Black pepper to taste
  • Grated Parmesan cheese, to taste

How to Make

  • Step 1: Place bacon in a large skillet and fry until crisp.

  • Step 2: Remove, drain, crumble and set aside.

  • Step 3: Add butter and onion to skillet.

  • Step 4: Cook until onion is translucent.

  • Step 5: Mix in potatoes, clams, chopped parsley, salt and pepper.

  • Step 6: Press mixture down with spatula.

  • Step 7: Cook over medium-high heat until bottom is well-browned.

  • Step 8: Turn mixture over, mixing in some of the brown crust.

  • Step 9: Press down with spatula.

  • Step 10: Cook until bottom is brown.

  • Step 11: Top with cheese, cover and cook just until cheese is melted, 1-2 minutes.

  • Step 12: Garnish with parsley.
