Step 1: In a large skillet, cook the diced bacon until almost crisp; remove to a bowl, leave fat in the skillet.
Step 2: To skillet add in onion, bell pepper & celery, cook until softened but not brown. Add the ground beef and garlic along with the cooked bacon, and cook until ground beef is browned, breaking the meat up with a potato masher. Drain off oil if necessary.
Step 3: Stir in the Worcestershire sauce, hot sauce, tomato sauce, and ketchup. Simmer for about 15 minutes or until mixture begins to thicken. Add salt and pepper; taste and adjust seasonings as desired.
Step 4: Brush the bun bottoms with the melted butter and in a separate skillet or on a stove top grill, toast the buns.
Step 5: Spoon the beef mixture over bun and top with remaining top half of bun.
