Ingredients

The ingredients are:
  • 8 slices reduced-fat bacon
  • 1 pound scallops (jumbo size is best)
  • 1/2 English cucumber, sliced into 1/2 inch rounds
  • 12 grape tomatoes
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

How to Make

  • Step 1: Soak 8 wooden skewers in water for 30 minutes or use metal skewers.

  • Step 2: Preheat grill to high.

  • Step 3: To assemble skewers using two skewers which are parallel to each other thread one bacon strip, add a scallop and then flip the end of the bacon over the scallop and skewer in place, add a cucumber slice and a tomato - repeat until skewer is full using about 3 scallops, 3 cucumber slices, 3 tomatoes and 2 strips of bacon per skewer. Repeat process for remaining skewers. There will be 4 kabobs (2 skewers per kabob). Season with salt and pepper.

  • Step 4: Grill skewers for 4-5 minutes per side and cook until bacon is cooked and scallops begin to turn golden.
