  • 1 can (15 ounce) beets (grated, save juice)
  • 1 teaspoon salt
  • 1/4 cup onion, grated
  • 1 tablespoon lemon juice
  • 1 tablespoon vinegar
  • 4 cucumbers, peeled and chopped finely
  • 6 large eggs (hard-boiled, chopped finely)
  • 2 cups buttermilk
  • Garnish
  • 1 cup sour cream
  • 2 radishes, grated
  • 2 green onions, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon chives, minced

How to Make

  • Step 1: Boil grated onion, beets, beet juice, water, vinegar, lemon juice, salt together for 10 minutes. Chill in fridge.
