  • 1/3 cup red pepper, pureed (roasted)
  • 2 tablespoons dried thyme
  • 1 tablespoon minced garlic, prepared
  • 1 tablespoon minced ginger, prepared
  • 1/2 teaspoon onion salt
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cumin
  • 3 pounds pork (tenderloin cut into 1 inch cubes)
  • 2 bell peppers (cut into 1 inch pieces)
  • 1 onion (large, cut into 1 inch pieces)
  • 10 grape tomatoes (optional)

How to Make

  • Step 1: If using wooden skewers, soak them for about an hour.

  • Step 2: In a plastic bag, mix first 8 ingredients together.

  • Step 3: Add pork pieces to this marinade and let sit at least 2 hours.

  • Step 4: Place everything on skewers.

  • Step 5: Add tomato to top of skewer, if using.

  • Step 6: Grill until cooked through.
