Ingredients

The ingredients are:
  • 1 pound boneless, skinless chicken breasts (diced)
  • 2 tablespoons oil (olive oil)
  • 1 1/2 tablespoons chili powder
  • 1/2 teaspoon salt
  • Black pepper (a good amount)
  • 2 tablespoons ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 green bell pepper, seeded and sliced
  • 1/2 yellow pepper, seeded and sliced
  • 1/2 red bell pepper, seeded and sliced
  • 1/2 orange bell pepper, seeded and sliced
  • 1/2 small red onion, sliced
  • 3 to 4 cloves garlic, pressed
  • 1 can (14.5 ounce) diced tomatoes (do not drain)
  • 1 cup chicken broth
  • 1 1/2 cups heavy cream (whipping cream)
  • 1 pound dry angel hair pasta (cooked)

How to Make

  • Step 1: In a large skillet, heat olive oil. Add the cubed chicken. Cook, allowing chicken to brown on one side and flip to cook on other side (about 2 minutes each side). Add peppers, onion and garlic. Saute until they begin to soften, about 3-5 minutes.

  • Step 2: Add tomatoes (no need to drain), chicken broth and seasonings. Simmer about 10 minutes. Add in cream and heat until warmed (about 5 minutes).

  • Step 3: To serve, combine cooked pasta with chicken mixture.
