Ingredients

The ingredients are:
  • PASTRY
  • 1 deep dish (9 inch) pie pastry (baked until golden)
  • FILLING
  • 5 egg yolks
  • 1 1/2 cups Stevia
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 5 tablespoon cornstarch
  • 3 cups milk (I used skim)
  • 1 tablespoon vanilla extract
  • 2 tablespoons butter
  • MERINGUE
  • 5 egg whites
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar
  • 1/2 cup Stevia

How to Make

  • Step 1: In heavy saucepan, whisk together dry ingredients. Whisk in milk and cook over medium heat for 2-3 minutes. Lightly whisk egg yolks, stir 1/2 cup of warmed liquid into egg yolks and whisk back into pudding mixture. Continue cooking and whisking over medium heat until mixture comes to a boil and thickens. Remove from heat and whisk in butter and extract. Pour into baked pie shell. In clean bowl, beat egg whites, cream of tartar until peaks begin to form, add vanilla & gradually add Stevia while continuing to beat until stiff peaks form. After Preparing meringue, spread over the custard and bake in 350 oven until top is golden. Allow to cool & refrigerate any leftovers.
