Step 1: Preheat oven to 350 degrees F.
Step 2: Line baking sheets with parchment paper and set aside.
Step 3: In a medium bowl combine first 5 ingredients (sugar - salt) and then add the apples and toss.
Step 4: Unroll the pie crusts on a floured board and cut 3-inch rounds (note in description). Reroll the scraps of the pie crust dough until you have used it all up (need an even number of rounds).
Step 5: Brush each round with beaten egg and then place a large spoonful of the apple mixture in center of half of the rounds - top each with a plain round, which you need to cut a vent in, seal edges with a fork or your fingers and sprinkle with sugar.
Step 6: Bake mini pies on prepared baking sheets for 20 minutes or until golden.
