  • 3 cups cooked pasta shells (cooled completely or cold, or any small pasta you want that is good for salads)
  • 1/2 cup red bell pepper, finely diced
  • 1 small onion, diced (yellow or red, or could use green but white parts only)
  • 1 cup cucumber, diced (small diced, deseeded the cucumber)
  • 1/4 cup Parmesan Cheese, finely grated
  • 1/3 cup pine nuts (toasted, optional)
  • HONEY DIJON SALAD DRESSING
  • 1 whole lemon, juiced and finely grated zest
  • 2 tablespoons whole grain Dijon mustard
  • 2 tablespoons oil (olive oil)
  • 3 tablespoons honey
  • 1/2 teaspoon dried oregano
  • Salt and pepper to season
