Step 1: Preheat oven to 450 degrees.
Step 2: In a medium skillet, over medium heat add pork, onion, and bell pepper.
Step 3: Cook until pork is no longer pink and the veggies are tender.
Step 4: While pork/veggie mixture is cooking,make potatoes according to directions on package.
Step 5: If needed, drain pork/veggie add to potatoes.
Step 6: Pour into a 2 quart baking dish.
Step 7: Bake for 20 minutes, then top with remaining cheese.
Step 8: Return to oven for 10 more minutes or until cheese is lightly browned.
Step 9: Let stand for 10 more minutes, so sauce can thicken.
