Step 1: Mix together the mayonnaise and mustard and set aside.
Step 2: Butter one side of each slice of bread and place 2 slices butter side down into a skillet, add a slice of cheese and top with the remaining pieces of bread, butter side up.
Step 3: Bring to medium-high heat and cook both sides until brown and cheese is melted; set aside and keep warm.
Step 4: Cook the slices of bacon in the same skillet until just starting to crisp, remove the cooked bacon from skillet reserving the drippings.
Step 5: In the meantime, mix together the ground beef, montreal steak spice and pepper and shape into a large patty; cook in the bacon dripping over medium-high heat until cooked through and no longer pink, about 15 minutes. Set aside and keep warm.
Step 6: Plate one of the grilled cheeses, add a leaf of lettuce and top with the cooked patty, tomato slices and bacon slices.
Step 7: Spread the mayo and mustard mixture over the other grill cheese and place over bacon slices, mayo side down.
Step 8: Enjoy!
