  • 2 large eggs
  • 1/3 cup butter (very soft)
  • 3/4 cup yogurt ( vanilla or plain yogurt)
  • 1/2 cup molasses
  • 2 tablespoons honey
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon cloves
  • 2 teaspoons vanilla extract
  • 1/2 cup raisins
  • Powdered sugar (or a glaze)

How to Make

  • Step 1: Grease muffin pans or line with paper liners.

  • Step 2: Preheat oven to 375°F.

  • Step 3: Beat eggs until fluffy with softened butter. Stir in yogurt, molasses, honey and vanilla.

  • Step 4: In another bowl, combine flours, baking soda, baking powder, salt, cinnamon, ginger, nutmeg and cloves. Stir until no streaks remain. Gradually stir in dry mixture.

  • Step 5: Stir in raisins.

  • Step 6: Fill the muffin tins with the batter.

  • Step 7: Bake about 15 minutes or until a toothpick inserted in center comes out clean.

  • Step 8: Dust with powdered sugar or drizzle confectioners icing over top while still warm
