Step 1: Spray a pan with cooking oil and heat over medium heat.
Step 2: Add red and green onions and cook stirring for about 4 minutes or until soft and brown; remove from pan to a small bowl; set aside
Step 3: Combine the beef, chives, oregano, barbecue sauce, breadcrumbs, garlic and egg in a bowl.
Step 4: Stir in the onion mixture; mix thoroughly; form into 4 patties.
Step 5: Refrigerate patties while grill is heating.
Step 6: Spray a non-stick grill pan or barbecue grill with cooking oil and heat to medium-high.
Step 7: Grill the patties for 3 to 5 minutes per side or until no longer pink in the center.
Step 8: (Alternatively, place on a baking sheet in the center of a preheated 450ºF oven for 10 to 15 minutes or until cooked through, turning once.)
Step 9: Feta Aoili:
Step 10: Combine all ingredients in a bowl, breaking up any large chunks of feta.
Step 11: Thin (if needed) with either whipping cream, sour cream or yogurt to your desired thickness.
Step 12: Heat or toast buns; slather aioli on both sides of buns and add toppings of your choice.
