Ingredients

The ingredients are:
  • 24 ounces pork loin chops (4 sirloin chops, 6 ounce each)
  • 2 apples (peeled and grated down to the core, discard core)
  • 10 ounce sweet potato (one potato, peeled and grated)
  • 2 shallots, finely chopped
  • Fresh ginger, grated (1/2-inch piece)
  • 1/2 cup white wine
  • 2 tablespoons butter
  • 1/2 teaspoon dried thyme
  • Salt, to taste
  • Pepper, to taste

How to Make

  • Step 1: Melt 1 tablespoon butter in a skillet over medium-high heat.

  • Step 2: Add the onion, ginger and dried thyme and cook until onion is softened and translucent.

  • Step 3: Meanwhile coat a casserole dish with non-stick spray and add the grated sweet potato and apples.

  • Step 4: Add the onion mixture to the casserole dish and season with salt and pepper to taste.

  • Step 5: Season both sides of the pork chops with salt and pepper to taste.

  • Step 6: Melt the other tablespoon of butter in the skillet and brown the pork chops on both sides until they have a nice “crust”.

  • Step 7: Place the pork chops on top of the sweet potatoes, apples and onion mixture.

  • Step 8: Add the wine to the skillet and simmer while scraping up the bits until reduced by about half.

  • Step 9: Pour the wine over the pork chops and vegetables, cover and bake in a pre-heated 350 degree oven for 35 minutes or until sweet potatoes are soft.

  • Step 10: Uncover and cook for another 10 minutes.
