Step 1: In a deep pot, melt one tablespoon of butter and sauté the garlic for 2 minutes. Do not allow to brown or burn.
Step 2: Add the cooked and peeled potatoes to the pot, plus the remaining butter, sour cream, salt and pepper. Mash thoroughly. If necessary, add a little milk.
Step 3: Taste and adjust seasoning. Fold in the cilantro and serve immediately.
