Ingredients

The ingredients are:
  • 8 large eggs
  • 1 cup whole milk (or use 2%)
  • 1/3 cup all-purpose flour
  • 1 medium red bell pepper (finely chopped)
  • 3 green onions, finely chopped
  • 3 bacon slices (crisply cooked, drained and crumbled)
  • 1 teaspoon dried oregano
  • 1 cup cheese, shredded (kraft mozza-cheddar, shredded cheese or cheese of your choice)
  • 1 cup salsa (warmed)

How to Make

  • Step 1: Preheat oven to 350 F

  • Step 2: Line a 15"x10"x 1" tray with parchment paper with the paper extending over the edge on the shortest side of the pan

  • Step 3: Spray with cooking oil

  • Step 4: Beat the eggs, milk & flour until blended

  • Step 5: Stir in the pepper,green onions, cooked bacon & oregano

  • Step 6: Pour into the prepared pan, place in oven

  • Step 7: Bake 14 - 16 minutes until the edges are almost set

  • Step 8: Top with cheese

  • Step 9: Bake 2 minutes more

  • Step 10: Roll up the omelette starting at the short end, peeling off the paper as you go

  • Step 11: Place on a platter and cut into serving pieces

  • Step 12: Serve with the warmed salsa
