Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup pecan nuts (chopped)
  • 1/2 cup butter (or margarine)
  • 3/4 cup brown sugar
  • 2 large eggs (beaten)
  • 2 1/3 cups mashed banana (overripe bananas)

How to Make

  • Step 1: Preheat oven to 350F. Lightly grease a 9 x 5 inch loaf pan.

  • Step 2: In a large bowl, combine flour, baking soda, salt and pecans.

  • Step 3: In a separate bowl, cream together the butter and brown sugar.

  • Step 4: Stir in beaten eggs and mashed bananas until well blended.

  • Step 5: Stir banana mixture into the flour mixture and mix until just blended.

  • Step 6: Pour batter into prepared loaf pan.

  • Step 7: Bake for 60-65 minutes or until toothpick inserted into the centre of loaf comes out clean.

  • Step 8: Let bread cool in pan for 10 minutes, then turn out onto cooling rack.
