Ingredients

The ingredients are:
  • 1 1/2 pounds boneless skinless chicken breast halves
  • 1 can (10.75 ounce) reduced-fat condensed cream of mushroom soup
  • 1 can (4 ounces) mushrooms (drained)
  • 1/3 cup fat-free milk
  • 1/3 cup chardonnay (or other white wine)
  • 1 1/2 teaspoons dried minced onion
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning (I used a Tuscan blend)
  • 2 tablespoons fresh parsley (chopped)
  • 1/2 cup carrots, sliced
  • 1/2 cup celery, sliced
  • 2 cups cooked brown rice

How to Make

  • Step 1: Place frozen chicken breast in crock pot.*

  • Step 2: In a bowl, combine soup, mushrooms, milk, wine, and seasonings, then pour over chicken.

  • Step 3: Turn crock pot to high and cook for 3 hours. *If using thawed or fresh chicken breast, turn crock pot to low.

  • Step 4: Add carrots and celery, reduce heat to low, and continue cooking an additional 3 hours. I stir hourly, but it's optional.

  • Step 5: Before serving, stir and partially shred chicken; serve over 1/3 cup brown rice.
