Step 1: Place half the chopped onion in a 1 litre mason jar.
Step 2: Slice your kielbasa into 1 inch thick rounds, slice across the middle then toss into the jar.
Step 3: Top with the remaining onions.
Step 4: Place the vinegar, water, brown sugar and pickling spices in a saucepan and bring to a boil, reduce heat and simmer while stirring until sugar is dissolved.
Step 5: Pour the liquid over the kielbasa and onion, making sure everything is covered.
Step 6: If need be, top with some more vinegar.
Step 7: Allow to marinate refrigerated for 1 week before eating.
Step 8: This will keep for 2 months while refrigerated.
