  • 8 ounces low-fat mozzarella cheese (see note in intro.)
  • 2 tablespoons oil (olive oil, plus)
  • 2 teaspoons oil (vegetable oil)
  • 1/2 teaspoon cayenne pepper
  • 3 tablespoons vinegar (sherry wine vinegar)
  • 1/2 cup water
  • 2 teaspoons dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/8 teaspoon garlic powder
  • 1/2 teaspoon granulated sugar
  • 5 black peppercorns
  • 5 juniper berries

How to Make

  • Step 1: Place cheese in a 1 quart jar.

  • Step 2: Combine remaining ingredients in a small saucepan.

  • Step 3: Bring to a boil over medium heat.

  • Step 4: Remove from heat and cool 10 minutes.

  • Step 5: Pour liquid over cheese in jar.

  • Step 6: Refrigerate 1 to 2 weeks before using.
