  • 1/2 pound ground chicken
  • 1/4 cup oats (rolled oats)
  • 3 tablespoons hot sauce (Frank’s RedHot sauce, plus more for serving)
  • 1 teaspoon dried parsley
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • Fresh ground pepper to taste
  • Celery leaves, chopped

How to Make

  • Step 1: Mix the first 7 ingredients together well and shape into 1 inch meatballs.

  • Step 2: Generously coat a rimmed baking sheet with non-stick spray and place the meatballs on the baking sheet.

  • Step 3: Cook in a pre-heated 425 degree oven for 15 to 20 minutes, depending on how big you have made the meatballs, turning every 5 minutes until cooked through.

  • Step 4: Place on a serving platter, drizzle with a bit of Frank’s RedHot sauce and sprinkle with celery leaves.
