Ingredients

The ingredients are:
  • 2 pounds zucchini
  • Salt, to taste
  • 8 ounces mozzarella cheese, grated
  • 8 ounces cheddar cheese, grated
  • 1/2 cup parmesean cheese, grated
  • 3 large eggs, beaten
  • 1 onion, chopped
  • 1 clove garlic, minced
  • Oil for frying
  • 1 can (8 ounce) tomato sauce
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • Salt and pepper, to taste

How to Make

  • Step 1: Grate the zucchini, salt lightly and squeeze in a paper towel to get excess moisture out.

  • Step 2: Mix together half of the cheddar and mozzarella, all of the parmesean, zucchini and eggs.

  • Step 3: Press mixture in bottom of a greased flat pan.

  • Step 4: Bake at 400 degrees for 15 minutes, or until lightly browned.

  • Step 5: While zucchini crust cooks, saute onion and garlic in a small amount of oil.

  • Step 6: Add tomatoe sauce, spices, salt and pepper to taste.

  • Step 7: Simmer until crust is ready.

  • Step 8: Pour sauce over zucchini crust.

  • Step 9: Top with the rest of the cheeses and toppings of your choice (what you like on pizza).

  • Step 10: Bake at 350 degrees for 15 or until hot and bubbly.
