Step 1: Brush a cast iron skillet with some back drippings or oil.
Step 2: In a medium size bowl, combine 1/4 cup dripping with next 3 ingredients. Place mixture in the greased skillet and flatten with a metal spatula.
Step 3: Bake hash browns at 400º F for 20 minutes or until potatoes are tender when tested with a knife.
Step 4: Turn heat to broil and broil potatoes about 5 – 10 minutes or until browned and crisp.
Step 5: Serve immediately
