Ingredients

The ingredients are:
  • Bacon fat (about 1/4 cup should do it, plus more to great the skillet)
  • 3 green onions, chopped
  • Salt and pepper to taste
  • 2 pounds Yukon Gold potatoes (grated coarsely then wrapped in kitchen towel to remove all excess moisture)

How to Make

  • Step 1: Brush a cast iron skillet with some back drippings or oil.

  • Step 2: In a medium size bowl, combine 1/4 cup dripping with next 3 ingredients. Place mixture in the greased skillet and flatten with a metal spatula.

  • Step 3: Bake hash browns at 400º F for 20 minutes or until potatoes are tender when tested with a knife.

  • Step 4: Turn heat to broil and broil potatoes about 5 – 10 minutes or until browned and crisp.

  • Step 5: Serve immediately
