Ingredients

The ingredients are:
  • 4 ounces bittersweet chocolate (chopped)
  • 1/2 cup unsalted butter (1 stick)
  • 3/4 cup granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 3 large eggs (beaten until pale and fluffy)
  • 1/2 cup unsweetened cocoa powder (sifted, Dutch process cocoa powder)
  • 2 pears (ripe pears – halved, cored and thinly sliced)

How to Make

  • Step 1: Preheat oven to 375° F.

  • Step 2: Spray a 9-inch springform pan and line the bottom with parchment paper; spray paper.

  • Step 3: Melt chocolate and butter in a double boiler over simmering water, stirring until smooth.

  • Step 4: Remove from heat and whisk in sugar and cinnamon.

  • Step 5: Whisk some of the warm chocolate/sugar mixture into the eggs to temper them and then add eggs to chocolate and whisk well.

  • Step 6: Whisk in cocoa powder until just combined.

  • Step 7: Pour batter into prepared pan and fan pear slices on top.

  • Step 8: Bake until top has formed a thin crust, 25 to 30 minutes.

  • Step 9: Cool in pan on a rack 5 minutes then remove sides of pan and transfer cake to a serving plate.
