Step 1: Coat a rimmed baking sheet with non-stick spray and lay the fillet skin side down on the baking sheet; pat fish dry and sprinkle with salt and pepper.
Step 2: Mix together the olive oil, liquid smoke, garlic powder and oregano and rub evenly over the fillet with the back of a spoon.
Step 3: Place the prepared fillet in a preheated 425 degree Fahrenheit oven.
Step 4: Cook for 10 to 15 minutes, depending on thickness of fillet.
