  • 2 to 4 large eggs (or extra large eggs)
  • Salt and pepper
  • 1/3 cup ketchup
  • 1/4 cup water
  • 2 teaspoons white vinegar
  • 1 tablespoon butter
  • 1/4 cup cheddar cheese, shredded
  • Hot sauce (optional)
  • 3 ounces bread slices (toasted, 2 thick slices preferably)

How to Make

  • Step 1: In a small skillet over medium heat, combine ketchup, vinegar and water. Stir until the liquid starts to bubble. Mix in the butter until melted and combined.

  • Step 2: Gently add in the eggs into simmering ketchup mixture. Cover with a tight-fitting lid and cook for 2 1/2- 3 minutes.

  • Step 3: Gently remove the eggs with a slotted spatula and place onto the toast.

  • Step 4: Pour the hot ketchup sauce over the eggs and top with shredded cheese if desired.

  • Step 5: Top with hot sauce if you like.
