Step 1: In a small skillet over medium heat, combine ketchup, vinegar and water. Stir until the liquid starts to bubble. Mix in the butter until melted and combined.
Step 2: Gently add in the eggs into simmering ketchup mixture. Cover with a tight-fitting lid and cook for 2 1/2- 3 minutes.
Step 3: Gently remove the eggs with a slotted spatula and place onto the toast.
Step 4: Pour the hot ketchup sauce over the eggs and top with shredded cheese if desired.
Step 5: Top with hot sauce if you like.
