  • 2 tablespoons unsalted butter
  • 1/4 cup yellow onion, finely chopped (1/2 a medium onion)
  • 1/3 cup slivered almonds
  • 1 cup long grain white (8 ounces) dry rice
  • 2 cups chicken broth
  • 1/4 cup lime juice
  • 2 tablespoon soy sauce
  • Freshly ground black pepper, to taste
  • 2 teaspoons lime zest, grated
  • Fresh parsley leaves, chopped, for garnish

How to Make

  • Step 1: In a medium saucepan, melt the butter over medium-high heat. Stir in the onion and almonds. Cook for 5 to 7 minutes or until the onion is softened and the almonds are golden, stirring occasionally.

  • Step 2: Add the rice; cook and stir for 1 minute.

  • Step 3: Slowly stir in the broth, lime juice, soy sauce and pepper. Bring to a boil.

  • Step 4: Cover, reduce heat to low, simmer for 15 to 20 minutes or until liquid is absorbed.

  • Step 5: Stir in lime zest, fluff with a fork and garnish with parsley.

  • Step 6: Serve.
