  • 2 large eggs
  • 2 cups all purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups buttermilk
  • 1/2 teaspoon vanilla
  • 4 tablespoons unsalted butter (melted and cool)

How to Make

  • Step 1: In a bowl beat the eggs until frothy.

  • Step 2: Add the buttermilk, melted butter and vanilla and mix well.

  • Step 3: Add the flour, sugar, baking powder, baking soda and salt, and mix just until just blended - there should be some lumps.

  • Step 4: Heat lightly greased griddle at 350 degrees.

  • Step 5: Pour about 1/3 cup of the batter onto griddle for each pancake.

  • Step 6: Cook until the tops of the pancakes are covered with tiny bubbles and the batter is set.

  • Step 7: Flip pancakes and cook until the undersides are golden brown.

  • Step 8: Repeat with remaining batter.
