Ingredients

The ingredients are:
  • MEATBALLS
  • 1 pound ground chicken (half white and dark chicken)
  • 1/2 cups breadcrumbs (Italian seasoned)
  • 1 teaspoon crushed red pepper flakes (or more or less)
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon ground coriander
  • 1 teaspoon garlic powder (or 4 minced garlic cloves)
  • 1/4 teaspoon ground fennel seed
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh cracked black pepper
  • 1 large egg (lightly beaten)
  • 2 tablespoons milk
  • 2 tablespoons Frank's buffalo hot sauce
  • BUFFALO SAUCE
  • 1 cup Frank’s buffalo sauce
  • 8 tablespoons butter (preferably unsalted)
  • 1/4 to 1/3 cup honey (start by adding 1/4 cup then add more until you get the desired sweetness)

How to Make

  • Step 1: In a large mixing bowl, combine all meatball ingredients. Mix well, do not over mix or you will have tough meatballs. Cover and place in refrigerator for 24 hours.

  • Step 2: Preheat oven to 350°.

  • Step 3: Prepare an extra large baking sheet. Line with parchment paper.

  • Step 4: Using a 1 tablespoon measuring spoon, scoop out meat and place on baking sheet. After all meatballs have been scooped onto tray, roll into balls. (If you lightly wet your hands the meatballs will form better and crack less.)

  • Step 5: Bake for 16-18 minutes or until cooked completely.

  • Step 6: While meatballs are baking, prepare wing sauce: In a medium saucepan over medium heat combine all sauce ingredients. Stir to combine cook until ingredient come together, around 4-5 minutes.

  • Step 7: Remove meatballs from oven. Coat all meatballs in the sauce, or serve the sauce in a separate bowl for dipping. Serve.
