Ingredients

The ingredients are:
  • SALAD INGREDIENTS
  • 4 cups cooked chicken breast, chopped (four breasts)
  • 3 cups cauliflower florets (blanched)
  • 1 red bell pepper, cut in strips (or yellow pepper)
  • 6 whole radish, sliced
  • 1 small iceberg lettuce (torn into bite size pieces)
  • 1 small radicchio head (torn into bite size pieces)
  • 1 small red onion, diced
  • 1 can (14 ounce) garbonzo beans, drained
  • Chopped cheese (of choice)
  • VINAIGRETTE INGREDIENTS
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey
  • 1 medium garlic clove, minced
  • 1/4 cup cider vinegar
  • 1/2 cup oil (Extra virgin olive oil)
  • 1/2 teaspoon salt
  • Pepper

How to Make

  • Step 1: Toss all the salad ingredients together in a large bowl.

  • Step 2: For the dressing; Combine Dijon, honey, garlic and cider vinegar in a small bowl.

  • Step 3: Slowly whisk in olive oil to combine and season with salt and pepper.

  • Step 4: Pour the dressing over the top of the salad ingredients; toss to combine. Season with salt and pepper.

  • Step 5: Allow salad to sit 20 minutes at room temperature, or refrigerate for 45 minutes. Toss again before serving.
