Step 1: Place all the ingredients in a large pot and bring to a boil.
Step 2: Cover, reduce heat and simmer for 4 to 6 hours.
Step 3: Strain and cool the mixture completely in the refrigerator.
Step 4: Scrape and discard the fat from the top and place in the freezer in 2 cup portions for future use. ie: for gravy or soups
