Step 1: In large bowl, whisk together dry ingredients (flour, sugar, baking powder, baking soda and salt).
Step 2: In another bowl, whisk together buttermilk, egg, butter and vanilla then pour over dry ingredients. Whisk until combined, but still slightly lumpy.
Step 3: Lightly brush griddle with some oil at medium-high heat.
Step 4: Pour batter (1/4 cup at a time), into pan. Cook until bubbles appear on top, about 2 minutes. Flip and cook until bottoms are golden brown, about 1 minute.
