Step 1: Romaine Hearts ... Cut lengthwise, leaving the stem on. Brush with the oil on the outside leaves and the cut side. Season with salt and pepper.
Step 2: Grill ... Cut side down first; about 1-2 minutes until you have light grill marks; then flip and grill the other side for another 1-2 minutes. These can be done inside on a grill pan, or even in a saute pan if that is all you have.
Step 3: Note ... As it grills you can brush on a garlic butter, add a drizzle of red wine or balsamic vinegar, drizzle on lemon juice, or add some grated cheese to melt the last few minutes.
Step 4: Serve ... One half of a romaine heart is the perfect serving for 1 person. Or, you can chop the lettuce up and serve family style. Add your favorite dressing and any garnishes. One of my favorites is sauteed bacon bits, diced onion and a blue cheese dressing. Just ENJOY with your favorite toppings.
