Ingredients

The ingredients are:
  • 8 boneless skinless chicken breasts
  • 76 saltine crackers (crushed, 2 sleeves)
  • 2 cups all-purpose flour
  • 2 teaspoons seasoned salt
  • 3 teaspoons ground black pepper
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground red pepper, divided (this stuff is really hot!)
  • 1 cup milk
  • 2 large eggs
  • Oil (for skillet frying)

How to Make

  • Step 1: Place chicken breasts between 2 sheets of heavy-duty plastic wrap, and flatten to 1/4-inch thickness using a meat mallet or rolling pin.

  • Step 2: Combine cracker crumbs with the next 5 ingredients (use 1/4 teaspoon red pepper).

  • Step 3: Whisk the eggs with milk and 1/4 teaspoon red pepper.

  • Step 4: Dredge chicken in cracker crumb mixture; dip in milk mixture, and dredge in cracker mixture again.

  • Step 5: Pour oil to a depth of 1/2 inch in a 12-inch skillet (do not use a nonstick skillet). Heat to 360°. Fry chicken in batches for 6-8 minutes (adding oil as needed). Turn and fry 4 to 5 more minutes or until golden brown and cooked through.

  • Step 6: Remove to a wire rack.
