  • 2 (9-inch) pie pastry, unbaked
  • 3 large eggs
  • 2 tablespoons lemon juice, freshly squeezed
  • 1/2 cup water, at room temperature
  • 1/3 cup butter, melted
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 can (20 ounce) crushed pineapple, drained

How to Make

  • Step 1: Preheat oven to 400F

  • Step 2: Place bottom pie crust in to 9 inch pie pan. Set aside

  • Step 3: Beat eggs lightly. Add water, lemon juice & butter; blend.

  • Step 4: Add sugar, flour & salt; beat until smooth.

  • Step 5: Mix in pineapple.

  • Step 6: Pour mixture into unbaked bottom crust. Cover with a lattice top.

  • Step 7: Bake in pre-heated oven for 35-40 minutes
