Ingredients

The ingredients are:
  • 1 tablespoon oil (olive oil)
  • 1 tablespoon butter
  • 2 pounds boneless skinless chicken breasts (cubed into 1-inch pieces)
  • Italian seasoning
  • Garlic powder
  • Freshly ground pepper and salt
  • 1 small yellow onion, thinly sliced
  • 3 garlic cloves, finely chopped
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 2 tablespoons cornstarch
  • 1/4 cup Parmesan cheese, grated
  • 3 green onions, sliced (divided)

How to Make

  • Step 1: In a 12-inch skillet, heat oil and butter over medium-high heat. Generously season chicken pieces with Italian seasoning, garlic powder, salt and pepper; add to skillet. Cook 2 to 3 minutes or until golden. Add another tablespoon of butter, then add in chopped yellow onion and garlic. Cook about 5 minutes, stirring occasionally, until onion is tender.

  • Step 2: In small bowl, mix sour cream, broth and cornstarch until smooth. Pour over chicken mixture. Reduce heat to low. Cook about 5 minutes longer, stirring occasionally, until chicken is no longer pink in center and sauce is thickened. Stir in Parmesen cheese and half of the green onions.

  • Step 3: Serve chicken and sauce over rice.

  • Step 4: Sprinkle with remaining green onions.
