Step 1: Wash potatoes and cut into large chunks; place in a large saucepan with the garlic cloves and cover with water.
Step 2: Cover, and bring to a boil; reduce heat and simmer, covered, stirring occasionally, 20-25 minutes.
Step 3: Drain potatoes; add bleu cheese, milk, butter and pepper and coarsely mash with a potato masher or large fork.
Step 4: If potatoes seem too thick, add evaporated milk a teaspoon at a time until desired consistency.
