  • 4 boneless skinless chicken breasts (halves)
  • 1 whole avocado (sliced 1/2-inch thick, 8 pieces)
  • 4 ounces neufchatel cheese (sliced into 8 pieces, 1/3 less fat cream cheese)
  • 1/2 cup salsa

How to Make

  • Step 1: Preheat oven to 350F; spray a shallow baking dish with cooking spray.

  • Step 2: Slice a pocket in each chicken breast half, and place two slices each of avocado and cream cheese in each pocket.

  • Step 3: Close pockets with toothpicks and bake for 45 minutes.

  • Step 4: Spoon salsa evenly over top of chicken and bake an additional 15 minutes.
